Zucchini Noodles with Pesto and Cherry Tomatoes

Ingredients:
• 2 large zucchinis, spiralized
• 1 cup cherry tomatoes, halved
• 1/2 cup fresh basil leaves
• 1/4 cup pine nuts
• 1/4 cup grated Parmesan cheese
• 2 cloves garlic
• Juice of 1 lemon
• 1/3 cup extra-virgin olive oil
• Salt and pepper to taste
Instructions:
1. In a food processor, combine basil, pine nuts, Parmesan, garlic, and lemon juice. Pulse until finely chopped.
2. With the processor running, slowly drizzle in the olive oil until a smooth pesto forms. Season with salt and pepper to taste.
