Dark Chocolate-Dipped Fruit Skewers

Okay, this one is not hard, but can be a great healthy alternative to dozens of holiday sugar cookies, cakes, pastries (oh my!)

Ingredients:

• Strawberries, washed and dried
• Pineapple chunks
• Dark chocolate, melted
• Pistachios, chopped (optional)
• Shredded coconut (optional)

Instructions:

1. Thread strawberries and pineapple onto skewers.
2. Dip each skewer in melted dark chocolate.
3. Place on a parchment-lined tray and sprinkle with chopped pistachios or shredded coconut if desired.
4. Allow the chocolate to set before serving.
