Avocado Chocolate Mousse with Raspberry Coulis

We’re getting fancy over here! Now, we know Avocados cost an arm and a leg these days, but this recipe might just be worth it in our book!

Ingredients:

  • 3 ripe avocados

  • 200g dark chocolate, melted

  • 1/4 cup cocoa powder

  • 1/4 cup maple syrup (adjust to taste)

  • 1 teaspoon vanilla extract

  • Raspberries (for coulis and garnish)

  • Splash of lemon juice

Instructions:

  1. In a blender or food processor, combine:

    • 3 ripe avocados

    • 200g melted dark chocolate

    • 1/4 cup cocoa powder

    • 1/4 cup maple syrup (adjust to taste)

    • 1 teaspoon vanilla extract

  2. Blend the ingredients until you achieve a smooth and creamy consistency for the avocado chocolate mousse.

  3. In a separate blender, make the raspberry coulis by blending:

    • Raspberries (quantity based on preference)

    • A splash of lemon juice

  4. Layer the avocado chocolate mousse with the raspberry coulis in serving glasses or bowls.

  5. Optionally, garnish with additional raspberries for a burst of freshness.

Feel free to adjust the quantities based on your taste preferences.
